A dinner like Pioneer Woman Beef with Snow Peas is one I plan and look forward to all week! It's one of my favorites. This is a satisfying, yet light meal made with tender sirloin or flank steak sliced super thin and marinated in garlic and soy sauce served with vibrant, crisp snow pea pods.
The Pioneer Woman Recipe has an Asian flair and uses regular ingredients that you probably already have in your kitchen. No fussy spices or anything! It's mild enough for your young ones too. Even the busiest weeknight can enjoy this quick, healthy dinner!
Ingredients That You'll Need:
Beef Stir Fry Sauce:
- Soy sauce, dry sherry, and Brown Sugar: These 3 ingredients go together perfectly(The combination of salt, tang, and sweetness is incredible).
- Fresh ginger: Adds wonderful aromatics and flavor for best results use fresh ginger.
- Cornstarch: Thickens the sauce.
For the Stir Fry:
- Beef sirloin: When thinly sliced, it absorbs marinades like a sponge.
- Snow Peas or Snap Peas: They have a fresh crisp flavor, a slight sweetness, and a bright green color that we love!
- Scallions: A subtle peppery flavor and my favorite way to finish off a stir fry.
- Red pepper flakes: Enhances flavor and adds a little heat.
- Vegetable oil: To sauté the beef and vegetables. Use sesame oil for even more flavor.
- White rice: For serving, so the sauce can soak in.
How To Make Pioneer Woman Beef And Snow Peas?
- Whisk together the soy sauce, dry sherry, and cornstarch in a bowl until dissolved. Stir in the brown sugar and ginger. Add the sliced meat and toss to coat. Place aside.
- Heat oil in a heavy skillet or wok over medium-high heat. Add snow peas and stir for 45 seconds until charred. Remove them from the pan with a slotted spoon. Place them aside.
- Allow the pan to become very hot again. Add half the meat to the pan by spreading it out with tongs (in my case, I left most of the marinade in the bowl) and half the scallions.
- Allow the meat to sear for one minute without stirring. Turn the meat over and cook for another 30 seconds. Immediately transfer the meat to a plate.
- Repeat with the other half of the meat, allowing the pan to get very hot again first (adding additional oil, if needed.)
- Put the first plate of meat on the grill and finish with the rest of the marinade, snow peas, red pepper flakes, and another half of the scallions.
- Turn off the heat after stirring over high heat for one minute to thicken. Check the seasoning and add salt only if necessary. Let the mixture sit for a few minutes.
- Immediately serve over hot rice and enjoy!
